  • 2 cups shredded cabbage (green or purple)
  • 1/2 cup julienned carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped roasted peanuts

For the Dressing:

  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 garlic clove, minced
  • 1 small red chili, finely chopped (optional)
  • 1 teaspoon grated ginger

Instructions

  1. Make the Dressing:

    • In a small bowl, whisk together fish sauce, lime juice, rice vinegar, honey, garlic, chili, and ginger.
    • Set aside to let the flavors blend.
  2. Assemble the Salad:

    • In a large mixing bowl, combine shredded chicken, cabbage, carrots, red bell pepper, red onion, cilantro, and mint.
  3. Toss & Coat:

    • Pour the dressing over the salad and toss well to coat evenly.
