Ingredients

  • 4 small seeded baguettes

  • 1 cup goat cheese, softened

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 red onion, sliced

  • Salt and pepper, to taste

  • 1 cup fresh arugula leaves

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Arrange the sliced bell peppers, zucchini, and red onion on a baking sheet.

  3. Drizzle with olive oil and season with salt and pepper.

  4. Roast the vegetables for 20-25 minutes, stirring halfway through, until tender and slightly caramelized. Let them cool.

  5. Slice each baguette lengthwise, without cutting all the way through, and gently open.

  6. Spread a generous layer of goat cheese on the bottom half of each baguette.

  7. Layer the roasted vegetables over the goat cheese.

  8. Top with fresh arugula and a few sprigs of parsley.

  9. Press the baguette gently to close, wrap with parchment paper for easier handling if desired, and serve.
