  • 3 cups Plain Flour (Sifted)
  • 1 tablespoon Pink Food Gel (Natural beetroot powder can be used)

For the Berry Filling

  • 1 cup Fresh/Frozen Raspberries (Tasty and tangy)
  • 1/4 cup Caster Sugar (Adjust to taste)
  • 1/4 cup Water
  • 1 tablespoon Cornflour (Arrowroot powder can be substituted)
  • 1/2 cup Strawberry/Raspberry Jam
  • 1/2 cup Chopped Fresh Strawberries

For the Frosting

  • 1/4 cup Dairy-Free Butter (Softened)
  • 1/4 cup Dairy-Free Cream Cheese (Soft and creamy)
  • 2 cups Icing Sugar (Adjust quantity to taste)
  • 1 teaspoon Vanilla Extract (Pure for best flavor)
  • 1/4 cup Freeze-Dried Strawberries/Raspberries (Optional but recommended)

Instructions

  1. Preparation Steps Melt the dairy-free butter and combine it with room temperature dairy-free milk, caster sugar, and active dry yeast. Allow this mixture to froth for about 10 minutes until bubbly and foamy.
  2. Mix the Dough In a large bowl, mix the sifted plain flour with the yeast mixture and add the pink food gel until well incorporated.
  3. Knead and Rise Transfer the mixture to a floured surface and knead the dough until it’s smooth and elastic, about 5-7 minutes. Let it rise in a covered bowl for 1-2 hours.
  4. Prepare Filling In a saucepan, simmer fresh or frozen raspberries with sugar, water, cornflour, and your choice of jam until it thickens. Let it cool before spreading on the dough.
  5. Assemble Rolls Roll the dough into a large rectangle, spread the berry filling, sprinkle chopped strawberries, then roll tightly.
  6. Slice and Second Rise Slice the rolled dough into individual rolls using dental floss, place in a greased baking dish, cover, and let rise for 40-60 minutes.
  7. Bake Preheat the oven to 180°C (350°F) and bake the cinnamon rolls for 25-30 minutes or until golden brown.
  8. Make Frosting In a mixing bowl, whisk together dairy-free butter and cream cheese, gradually adding icing sugar and vanilla extract until smooth.
