Syrnyk is a light and fluffy Ukrainian baked cheesecake made with cottage cheese, eggs, and sugar—naturally sweet and simple, often served chilled with powdered sugar or fruit preserves.

Ingredients

  • 2 lbs cottage cheese (well-drained, or use farmer’s cheese)
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp semolina or all-purpose flour (optional, for firmness)
  • Butter, for greasing the baking dish

Instructions

  1. Preheat oven to 175°C (350°F). Grease a 9-inch (23 cm) round or square baking dish with butter.
  2. In a food processor or large bowl, blend cottage cheese until smooth.
  3. Add eggs, sugar, and vanilla extract, mixing until fully combined. If the cheese is very moist, add semolina or flour to firm it up.
  4. Pour mixture into the prepared baking dish and smooth the top.
  5. Bake for 45–55 minutes until the center is set and top is lightly golden.
  6. Let cool in the dish, then refrigerate for at least 2 hours for best texture.
  7. Slice and serve chilled, plain or with jam, berries, or powdered sugar.

Notes

  • Farmer’s cheese yields a firmer, smoother texture than cottage cheese.
  • Drain cottage cheese through a cheesecloth if very wet.
  • Add lemon zest or raisins for extra flavor.
  • Great make-ahead dessert—best served cold from the fridge.
