Caramel Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie cups.
  2. Cream butter and sugar: Using a stand mixer with a flex edge beater attachment, beat together the salted butter and granulated sugar until the mixture is light and fluffy.
  3. Add egg white and vanilla: Incorporate the egg white and vanilla extract into the creamed mixture, blending well to combine all wet ingredients.
  4. Mix in dry ingredients: Add the all-purpose flour and baking powder to the wet mixture and mix thoroughly until a soft cookie dough forms.
  5. Shape dough: Roll the dough out on a lightly floured surface to a thickness of 1/4 to 1/2 inch. Use a round cookie cutter to cut out circles, then transfer these onto an ungreased baking sheet.
  6. Bake the cookies: Bake the dough circles at 350°F for 6 to 8 minutes until the cookies are puffed up and no longer glossy on top. Remove from oven.
  7. Cool the cookies: Transfer the cookies to a wire rack and allow them to cool completely before adding toppings.
