Tender onions stuffed with a fragrant mix of rice, herbs, and spices, then baked in a rich tomato sauce. This comforting Turkish dish is bursting with bold flavors and perfect for a hearty meal.

Ingredients

  • 6 large onions
  • 1/2 cup short-grain rice, rinsed
  • 1/2 lb ground beef or lamb (optional for a vegetarian version)
  • 2 tablespoons olive oil
  • 1 small tomato, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
For the Sauce:
  • 1 cup tomato sauce
  • 1 cup vegetable or chicken broth

Instructions

  • Prepare the Onions:

    • Preheat oven to 375°F (190°C).
    • Peel the onions and boil them whole for 10 minutes until slightly softened. Drain and let cool.
    • Carefully separate the onion layers and set them aside.
  • Make the Filling:

    • In a mixing bowl, combine rinsed rice, ground meat (if using), chopped tomato, minced garlic, cinnamon, allspice, paprika, salt, black pepper, parsley, and mint. Mix well.
  • Stuff & Roll the Onions:

    • Fill each onion layer with the prepared mixture and roll tightly to form small stuffed parcels.
  • Bake the Stuffed Onions:

    • Arrange the stuffed onions in a baking dish.
    • Pour tomato sauce and broth over them.
    • Cover with foil and bake for 45 minutes until the onions are tender and the flavors meld together.
  • Serve & Enjoy:

    • Garnish with fresh parsley and serve warm.

Notes

  • For a vegetarian version, omit the meat and add chopped mushrooms or nuts for extra texture.
  • Serve with yogurt or a side of crusty bread for a complete meal.
