Spice up your sandwich game with this Tunisian Tuna Fricassé Sandwich! A beloved North African street food, it features spicy harissa tuna, crisp veggies, olives, and eggs inside a warm, tender roll. Packed with Mediterranean flavor, it’s an easy, crave-worthy meal that’s bold, balanced, and ready in minutes.

Ingredients

  • 4 small sandwich rolls (or fried fricassé-style buns)

  • 1 can tuna in olive oil, drained

  • 2 hard-boiled eggs, sliced

  • 1/4 cup black olives, pitted and sliced

  • 1 small cucumber, finely diced

  • 1 tomato, finely diced

  • 2 tbsp parsley, chopped

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tsp harissa (or more to taste)

  • Salt and pepper, to taste

Instructions

  1. In a small bowl, mix cucumber, tomato, parsley, lemon juice, olive oil, salt, and pepper to create a fresh chopped salad.

  2. In another bowl, mix drained tuna with harissa until evenly combined.

  3. Slice each sandwich roll open without cutting all the way through. Toast lightly if preferred.

  4. Fill each roll with spicy tuna, a scoop of the chopped salad, olive slices, and slices of hard-boiled egg.

  5. Press gently to close and serve warm or at room temperature.

  6. Optional: add a squeeze of lemon or a dollop of extra harissa for more heat.

Notes

  • Fricassé buns are traditionally fried but can be swapped for soft dinner rolls or sub buns for ease.

  • Great for meal prep—prepare fillings in advance and assemble fresh.

  • Add capers or pickled vegetables for extra tang and texture.
