Instructions

  1. Prepare the roast beef: Cook the roast beef by your preferred method—crockpot, oven roasting, or Instant Pot—as outlined in the notes. Once cooked, shred or chop the roast beef into bite-sized pieces.
  2. Preheat the oven: Set your oven to 450°F (232°C) and prepare a greased cookie sheet for baking the pasties.
  3. Prepare the potatoes: Peel and cube the baked or boiled potatoes.
  4. Combine filling: In a large bowl, mix the shredded roast beef, cubed potatoes, salt, and pepper until well combined.
  5. Assemble the pasties: Unroll the pie crusts and cut each in half to create four pieces. Place a generous amount of the beef and potato filling onto each crust piece, fold over to form a half-moon shape, and seal the edges firmly. Make a few small slits on top of each pasty to allow steam to escape.
  6. Bake the pasties: Arrange the assembled pasties on the greased cookie sheet and bake in the preheated oven for 15 to 20 minutes or until the crust turns golden brown.
  7. Finish with butter: Immediately upon removing from the oven, brush the tops of the pasties with melted butter to add flavor and shine.
