Instructions
Hard boil eggs: Place the 12 large eggs in a large saucepan and cover them completely with water. Transfer the pan to the stovetop over high heat and bring to a boil. Once boiling, let them boil for one minute, then cover the saucepan with a lid, remove from heat, and let the eggs sit in the hot water for 17 minutes. Afterward, drain the hot water and transfer the eggs into an ice bath to cool completely, which makes peeling easier. Peel the eggs and set aside.
Prepare egg filling: Slice the peeled eggs in half lengthwise and carefully remove the yolks, placing them into a medium-sized bowl. Add the mayonnaise, softened butter, yellow mustard, Dijon mustard, sweet gherkin pickle juice, sugar, salt, pepper, and a dash of Tabasco sauce if desired. Use a fork to thoroughly mash and mix all ingredients until you achieve a smooth, creamy filling.
