Ingredients

Units Scale

For the Chicken:

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha (optional, for heat)
  • 12 tablespoons water (to adjust consistency)

For the Wraps:

  • 4 large whole wheat or spinach tortillas
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup red cabbage, shredded
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Marinate the Chicken: In a bowl, mix together the soy sauce, lime juice, sesame oil, minced garlic, salt, and pepper. Add the chicken breasts and toss to coat. Let the chicken marinate in the refrigerator for at least 20 minutes to absorb the flavors.
  2. Make the Peanut Sauce: While the chicken is marinating, prepare the peanut sauce. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha (if using). Gradually add water until you reach your desired sauce consistency—smooth but not too runny. Set aside.
  3. Cook the Chicken: Preheat your grill or stovetop skillet over medium heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Transfer to a cutting board and let it rest for a few minutes before slicing into thin strips.
  4. Assemble the Wraps: Lay one tortilla flat on a clean surface. In the center, layer the chicken strips, shredded carrots, julienned cucumber, shredded red cabbage, and chopped cilantro. Drizzle with the prepared peanut sauce.
  5. Roll the Wraps: To roll the wrap, fold in the sides over the filling, then start from the bottom and roll tightly to secure the filling. Repeat with the remaining tortillas and filling.
  6. Serve: Slice each wrap in half on a diagonal and serve with lime wedges and additional peanut sauce on the side for dipping. Enjoy your delicious Thai Peanut Chicken Wraps!

Notes

  • Grilled shrimp or tofu can easily replace chicken for substitutions.
  • Adding avocado or bell peppers can provide extra flavor and nutrients.
