Ingredients

Scale

Cookie Dough

  • 3⁄4 cup butter (softened or vegan butter for vegan version)
  • 1⁄2 cup lightly packed brown sugar
  • 1 egg (or 1 tbsp ground flax + 2 tbsp water for vegan option)
  • 1⁄2 tsp vanilla extract
  • 1 1⁄2 cups all-purpose flour
  • 1⁄4 tsp salt

Filling

  • 1⁄4 cup jam of choice (raspberry, strawberry, apricot, etc.)

Instructions

  1. Preheat Oven: Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper to prepare for baking.
  2. Cream Butter and Sugar: Using an electric mixer, beat the softened butter and brown sugar on high speed until the mixture becomes light and fluffy, which will create a smooth base for the cookie dough.
  3. Add Wet Ingredients: Incorporate the egg (or flax egg substitute) and vanilla extract into the creamed mixture, mixing until fully combined and smooth.
  4. Combine Dry Ingredients: Add the all-purpose flour and salt to the wet ingredients, blending gently until a soft, cohesive dough forms without overmixing.
  5. Shape Dough Balls: Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing each approximately 1½ inches apart to allow room for spreading.
  6. Create Heart Indents: Press your thumb or the rounded back of a teaspoon into the center of each dough ball twice to form a neat heart-shaped indentation, which will hold the jam filling.
  7. Bake Cookies: Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden but the cookies remain soft in the middle.
  8. Cool and Adjust Indents: Allow the cookies to cool on the baking sheet for 5 minutes. If the heart indentations have filled in during baking, gently reshape them while the cookies are still warm to keep the jam wells defined.
  9. Add Jam Filling: Once the cookies are completely cooled, spoon a small dollop of your favorite jam into each heart-shaped center, filling the indentations neatly.

Notes

  • For a vegan alternative, replace butter with vegan butter and use ground flaxseed mixed with water as an egg substitute.
  • Use your favorite jam flavors like raspberry, strawberry, or apricot to customize the cookies.
  • Ensure cookies are slightly cooled before adding jam to prevent the jam from melting and running.
  • Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
  • You can freeze unbaked dough balls and bake them later for fresh cookies anytime.
