Instructions

  1. Prepare the Pan: Line a small sheet pan with parchment paper and brush it lightly with extra virgin olive oil to prevent sticking.
  2. Toast Sesame Seeds: Heat a nonstick pan over medium heat, add the untoasted sesame seeds, and stir continuously until they turn golden brown and begin to gleam, about 3-4 minutes. Transfer them to a plate to cool.
  3. Heat Honey: Return the pan to medium heat and pour in the honey. Stir continuously and heat until it starts to bubble, reaching around 250°F, boiling for about 3-4 minutes.
  4. Combine Honey and Sesame Seeds: Carefully add the toasted sesame seeds back into the pan with the boiling honey. Stir constantly for about 5 minutes to blend thoroughly.
  5. Form Candy: Quickly pour the hot honey and sesame seed mixture onto the prepared sheet pan. Spread evenly and flatten the surface using parchment paper or a rolling pin.
  6. Cool and Cut: Allow the candy to cool for about 20 minutes until set. Then, cut into small rectangular bars or squares with a sharp knife.
