These soft and fluffy German sweet dumplings, known as Dampfnudel, are served with a luscious strawberry topping and a light vanilla sauce, making for a comforting and delightful dessert or snack.

  • For the dough:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 3/4 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • For the strawberry topping:
  • 2 cups fresh strawberries, chopped
  • 1/4 cup sugar
  • For the vanilla sauce:
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Instructions

  1. In a large mixing bowl, combine the flour, salt, sugar, and yeast. Add the warm milk, melted butter, and egg. Mix until the dough starts to come together.
  2. Knead the dough for 5-7 minutes until smooth and elastic. Cover with a clean towel and let it rise in a warm place for 1 hour, or until it doubles in size.
  3. While the dough is rising, prepare the strawberry topping by tossing the chopped strawberries with sugar. Set aside to release juices.
  4. Once the dough has risen, divide it into 8 equal portions. Roll each portion into a ball and place on a parchment-lined baking tray. Let rise for an additional 30 minutes.
  5. To cook the dumplings, heat a large skillet with a lid over medium heat. Add a little butter and place the dumplings in the skillet, ensuring they don’t touch. Add 1/4 cup of water and cover tightly. Cook for 15-20 minutes, or until puffed and cooked through. Do not open the lid while cooking.
  6. While the dumplings cook, make the vanilla sauce. Combine the milk, heavy cream, sugar, and vanilla extract in a saucepan and heat until simmering.
  7. Mix the cornstarch with cold milk to form a slurry and add it to the simmering mixture. Stir until thickened, about 2-3 minutes. Remove from heat.
  8. Once the dumplings are ready, serve them hot with fresh strawberry topping and drizzle with the vanilla sauce.

Notes

  • For extra flavor, you can add a touch of lemon zest to the strawberry topping.
  • If you prefer a richer vanilla sauce, use more heavy cream in place of milk.
  • These dumplings can also be served with other fruit toppings like raspberries or blueberries.
