Brussels Sprouts

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt and freshly ground black pepper to taste

Sauce and Garnish

  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the ground beef: Add the ground beef to a large skillet and crumble it while cooking over medium heat. Stir in the green onions and season with kosher salt, freshly ground black pepper, garlic powder, sriracha (if using), and low sodium soy sauce. Cook until the beef is thoroughly browned and cooked through. Once done, remove the beef mixture from the skillet and set it aside on a plate.
  2. Sauté the Brussels sprouts: Add one tablespoon of avocado oil to the same skillet, then add the shredded Brussels sprouts. Season with salt and pepper to taste. Sauté the sprouts, stirring occasionally, until they become soft and develop a caramelized golden-brown color, about 8-10 minutes.
  3. Combine and finish: Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and fresh lime juice. Stir everything together thoroughly to evenly coat the beef and sprouts in the sauce. Cook for an additional 1-2 minutes to blend the flavors and heat through.
  4. Serve: Remove from heat and sprinkle with sesame seeds if desired. Serve hot over rice or your preferred side.
