Instructions

  1. Prepare the tartlet crust: Preheat the oven to 375°F (190°C). Roll out the puff pastry sheet on a floured surface and use a round cutter to cut out circles large enough to fit into tartlet pans. Place the puff pastry circles into the pans, gently pressing them into the edges. Brush the pastry with melted butter and sprinkle with sugar if desired.
  2. Bake the crust: Bake the puff pastry in the preheated oven for about 12-15 minutes or until golden and crisp. Once done, remove from the oven and set aside to cool.
  3. Make the strawberry filling: In a small saucepan, combine the chopped strawberries, strawberry jam, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool to room temperature.
  4. Assemble the tartlets: Once the tartlet shells have cooled, spoon the strawberry filling into each tartlet. Gently spread it out to fill the edges.
  5. Add the topping: Arrange fresh strawberry pieces on top of the filled tartlets and garnish with small sprigs of rosemary for a touch of elegance.
