A tropical twist on a classic piña colada, bursting with sweet strawberries, creamy coconut, and a Malibu-infused frosting for the ultimate summer indulgence.

For the Strawberry Piña Colada:

  • 1 cup frozen strawberries
  • 1/2 cup pineapple chunks (fresh or frozen)
  • 1/2 cup coconut milk
  • 1/4 cup pineapple juice
  • 1/4 cup Malibu coconut rum (optional for a non-alcoholic version)
  • 1 tablespoon honey or agave syrup (optional)
  • 1 cup ice

For the Malibu Frosting:

  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon Malibu coconut rum
  • 1/4 cup finely chopped strawberries

For Garnish:

  • Fresh strawberries
  • Pineapple wedges
  • White chocolate shavings (optional)

Instructions

  1. In a blender, combine frozen strawberries, pineapple chunks, coconut milk, pineapple juice, Malibu rum (if using), and honey or agave syrup. Blend until smooth.
  2. Add ice and blend again until creamy.
  3. Pour the mixture into a chilled glass.
  4. In a separate bowl, whisk the heavy cream, powdered sugar, and Malibu rum until soft peaks form. Fold in finely chopped strawberries.
  5. Spoon or pipe the Malibu frosting on top of the drink.
  6. Garnish with a fresh strawberry, a pineapple wedge, and white chocolate shavings.
  7. Serve immediately and enjoy!

Notes

  • For a non-alcoholic version, omit the Malibu rum and replace it with additional pineapple juice.
  • Adjust sweetness by adding more or less honey/agave.
  • For a thicker consistency, use frozen pineapple chunks.
