Instructions

  1. Prepare the Filling: Beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and velvety. Set aside for later use.
  2. Crumble the Cookies: Place the cooled strawberry cheesecake cookies into a large bowl. Crumble them finely using your hands or a mixer paddle. Add spoonfuls of the prepared cheesecake mixture and blend thoroughly until the dough is thick and moldable. If the mixture feels too dry, add milk one teaspoon at a time until the desired consistency is reached.
  3. Shape the Truffles: Roll the cookie and cheesecake dough into tablespoon-sized smooth balls. Arrange them on a parchment-lined tray and chill in the refrigerator for 20 to 30 minutes to firm up.
  4. Dip in White Chocolate: Melt the white chocolate along with the optional coconut oil until silky and smooth. Using a fork or a dipping tool, coat each chilled truffle completely in the white chocolate. Place the coated truffles back on the parchment paper.
