These Strawberry Cheesecake Bars are a creamy, dreamy dessert with a buttery graham cracker crust, smooth vanilla cheesecake filling, and a vibrant strawberry topping. Finished with an optional white chocolate drizzle, they’re a festive and easy twist on a classic favorite!

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/3 cup butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened

  • 2/3 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup strawberry pie filling or fresh strawberries, sliced

  • White chocolate, melted (optional, for drizzling)

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.

  2. Make the crust: Mix graham cracker crumbs and melted butter until evenly combined. Press firmly into the bottom of the prepared pan. Bake for 8–10 minutes, then cool slightly.

  3. Make the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.

  4. Pour the filling over the cooled crust and smooth the top.

  5. Bake for 30–35 minutes or until the center is set but slightly jiggly. Cool to room temperature, then refrigerate for at least 3 hours (or overnight).

  6. Top with strawberry pie filling or fresh sliced strawberries.

  7. Drizzle with melted white chocolate if desired. Slice into bars and serve chilled.

Notes

  • Use a hot knife to slice clean bars.

  • Bars can be made up to 2 days in advance and stored in the refrigerator.

  • Swap strawberries for blueberries or cherries for a seasonal twist.
