Ingredients

Shortcrust Pastry:

  • 1 1/4 cups all-purpose flour

  • 1/2 cup cold unsalted butter, cubed

  • 2 tbsp powdered sugar

  • 1 egg yolk

  • 1-2 tbsp cold water

Custard Filling:

  • 1 1/4 cups whole milk

  • 3 egg yolks

  • 1/4 cup granulated sugar

  • 1 tbsp cornstarch

  • 1 tsp vanilla bean paste (or pure vanilla extract)

  • Pinch of salt

Topping:

  • 12-15 fresh strawberries, carved into blossom shapes

  • Optional: apricot glaze (1 tbsp apricot jam + 1 tsp hot water)

Instructions

Prepare the Pastry:

  1. In a food processor, blend flour, powdered sugar, and butter until the mixture is crumbly.

  2. Add egg yolk and cold water, mixing just until the dough forms.

  3. Wrap the dough in plastic wrap and chill for 30 minutes.

  4. Roll out the dough and press it into a 9-inch tart pan. Prick the base with a fork.

  5. Line with parchment and baking weights, and blind bake at 350°F (175°C) for 15 minutes.

  6. Remove weights and parchment, then bake for another 10 minutes until golden brown. Let cool completely.

Make the Custard:

  1. Heat milk in a saucepan until just steaming.

  2. In a bowl, whisk together egg yolks, sugar, cornstarch, vanilla, and salt.

  3. Slowly whisk in the hot milk, then return the mixture to the saucepan.

  4. Cook over medium heat, stirring constantly, until thickened.

  5. Pour into a bowl, press plastic wrap onto the surface, and chill until fully cooled.

Assemble the Tart:

  1. Spoon the chilled custard into the cooled tart shell and smooth the top.

  2. Arrange the carved strawberry blossoms on top in a decorative floral pattern.

  3. Optional: Warm apricot jam with water and brush over the strawberries for a glossy finish.

Chill & Serve:

  • Chill the tart for at least 1 hour before slicing. Serve cold for the best flavor and texture.

Notes

  • Use a paring knife or small cookie cutters to shape strawberry blossoms.

  • The custard can be made a day ahead for easy assembly.

  • Add edible flower petals or mint leaves for extra flair.
