2 1/2cups All-purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Teaspoon Ground Cinnamon
1/2cup Unsalted Butter, Melted And Cooled
1 1/4cup Sugar
1/2cup Plain Yogurt
2 Large Eggs At Room Temperature, Lightly Beaten
1 Teaspoon Vanilla Extract
3 Ripe Bananas, Mashed
1 1/2cups Diced Ripe Strawberries
Instructions
Preheat oven: Preheat oven to 350 degrees F.
Prepare pan: Spray a 9×5 inch loaf pan with baking spray.
Mix dry ingredients: In a medium sized bowl, whisk together the flour, baking soda, salt and cinnamon.
Mix wet ingredients: In another bowl, whisk together the butter, sugar, yogurt, eggs, and extract until blended.
Add bananas: Stir in the bananas.
Combine wet and dry: Add the flour to the bowl with the wet ingredients stirring just until mixed.
Add strawberries: Stir in the strawberries then dump the batter into the prepared pan, smoothing the top.
Bake: Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
Cool 15 minutes: Cool 15 minutes, then remove from the pan and cool completely.
