  • 2 1/2 cups All-purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Ground Cinnamon
  • 1/2 cup Unsalted Butter, Melted And Cooled
  • 1 1/4 cup Sugar
  • 1/2 cup Plain Yogurt
  • 2 Large Eggs At Room Temperature, Lightly Beaten
  • 1 Teaspoon Vanilla Extract
  • 3 Ripe Bananas, Mashed
  • 1 1/2 cups Diced Ripe Strawberries

Instructions

  1. Preheat oven: Preheat oven to 350 degrees F.
  2. Prepare pan: Spray a 9×5 inch loaf pan with baking spray.
  3. Mix dry ingredients: In a medium sized bowl, whisk together the flour, baking soda, salt and cinnamon.
  4. Mix wet ingredients: In another bowl, whisk together the butter, sugar, yogurt, eggs, and extract until blended.
  5. Add bananas: Stir in the bananas.
  6. Combine wet and dry: Add the flour to the bowl with the wet ingredients stirring just until mixed.
  7. Add strawberries: Stir in the strawberries then dump the batter into the prepared pan, smoothing the top.
  8. Bake: Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool 15 minutes: Cool 15 minutes, then remove from the pan and cool completely.
  10. Serve: Slice and enjoy!
