  • 1 Small Onion, Peeled And Finely Chopped
  • 1 cup Dry White Wine
  • 1 1/2 pounds (Or About 5 Cups) Fresh Shelled Peas (about 4 cups shelled)
  • 1 Clove Garlic, Minced
  • Salt & Pepper

Instructions

  1. Cook Pancetta and Onions: In a medium skillet, heat the olive oil and cook the pancetta and onion over medium heat until the pancetta is lightly browned and the onions soft, about 10 minutes.
  2. Add Garlic: Add the garlic and cook another minute or two until fragrant.
  3. Add Wine, Peas, and Pepper: Add the wine, peas, and pepper.
  4. Simmer: Simmer covered for about 5 minutes, then uncover and cook an additional 4 to 5 minutes, or until all the liquid is absorbed and the peas are tender crisp.
