  • 1 9-inch pastry crust
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup cooked spinach, drained
  • 1/2 cup goat cheese, crumbled
  • Salt, pepper, and a pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, milk, cream, nutmeg, salt, and pepper.
  3. Evenly spread the cooked, drained spinach and crumbled goat cheese over the bottom of the pastry crust.
  4. Pour the egg mixture over the spinach and cheese.
  5. Bake for 35 minutes, or until the filling is set and the top is golden.
  6. Cool slightly before slicing and serving.
