For the Chicken:

  • 1 1/2 lbs boneless, skinless chicken thighs (cut into chunks)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)

For the Spicy Honey Lime Glaze:

 

  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sriracha or hot sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Marinate the Chicken: In a bowl, toss the chicken with olive oil, salt, black pepper, garlic powder, smoked paprika, and cayenne. Let marinate for 15 minutes.
  2. Make the Glaze: Meanwhile, whisk together honey, soy sauce, lime juice, sriracha, garlic, ginger, and red pepper flakes in a saucepan. Simmer over medium heat for 3-4 minutes until slightly thickened.
  3. Preheat the Grill: Heat the grill to medium-high heat (400°F / 200°C).
  4. Assemble the Skewers: Thread the marinated chicken chunks onto skewers.
  5. Grill the Skewers: Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Glaze & Finish: Brush the skewers with the spicy honey lime glaze in the last 2-3 minutes of grilling.
  7. Serve: Remove from the grill, garnish with fresh cilantro, and serve with lime wedges.
