Ingredients

For the Chicken Sandwich:

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp cayenne pepper

  • Salt and pepper to taste

  • 4 slices cooked bacon

  • 1 ripe avocado, sliced

  • 2 slices pepper jack or cheddar cheese

  • 1/4 cup pickled jalapeños

  • 2 brioche buns, toasted

For the Chipotle Mayo:

  • 1/4 cup mayonnaise

  • 1 tbsp adobo sauce (from canned chipotles in adobo)

  • 1/2 tsp lime juice

Instructions

  1. Prep Chicken:
    Pound chicken breasts to even thickness. Rub with olive oil and season with paprika, garlic powder, cayenne, salt, and pepper.

  2. Grill Chicken:
    Preheat grill to medium-high. Cook chicken for 4–5 minutes per side or until internal temperature reaches 165°F (74°C).
    Top each piece with cheese in the last minute of grilling to melt.

  3. Make Chipotle Mayo:
    In a small bowl, mix mayo, adobo sauce, and lime juice until smooth.

  4. Toast Buns:
    Lightly toast brioche buns on the grill or in a skillet until golden.

  5. Assemble Sandwich:
    Spread chipotle mayo on both sides of each bun. Layer with sliced avocado, grilled chicken with melted cheese, bacon strips, and pickled jalapeños.

  6. Serve:
    Serve hot with fries, chips, or a crisp green salad.
