Spicy Garlic Seafood Stir-Fry

Juicy shrimp and tender calamari sautéed in a fiery garlic-chili sauce, bursting with umami and perfectly balanced with heat and sweetness.

Ingredients

  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb calamari, cleaned and scored
  • 1 tbsp neutral oil (like avocado or canola)
  • 4 garlic cloves, minced
  • 45 dried red chilies
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili paste or sambal oelek
  • 1 tsp sugar
  • 1/4 cup water or seafood stock
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)
  • 12 green onions, chopped

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add dried red chilies and garlic, and stir-fry until fragrant, about 30 seconds.
  3. Add shrimp and calamari, and stir-fry for 2–3 minutes until shrimp turn pink and calamari begins to curl.
  4. Stir in soy sauce, oyster sauce, chili paste, sugar, and water or stock. Mix well.
  5. Simmer for 1–2 minutes, then add cornstarch slurry. Stir until the sauce thickens and evenly coats the seafood.
  6. Add chopped green onions, toss to combine, and remove from heat.
  7. Serve hot with steamed jasmine rice or noodles.

Notes

  • Adjust the number of chilies to your heat preference.
  • Use fresh chilies instead of dried for a different texture and flavor.
  • This dish is best served immediately for maximum tenderness.
