Spicy Buffalo Cauliflower Bites with Ranch Dip offer a deliciously crispy and flavorful vegetarian snack or appetizer. Baked to golden perfection and tossed in tangy buffalo sauce, these bites are perfectly balanced with a cool creamy ranch dip, making them a great alternative to traditional buffalo wings.

Ingredients

Scale

The Veggie

  • 1 large head of cauliflower, cut into bite-sized florets

The Crispy Batter

  • ¾ cup all-purpose flour
  • ½ cup water or milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt

The Buffalo Sauce

  • ½ cup Frank’s RedHot Buffalo Wings Sauce
  • 12 tbsp melted butter

The Cooling Dip

  • Hidden Valley Ranch dressing or homemade: Greek yogurt, mayo, and dried dill

Optional Add-Ins and Tips

  • ½ cup Panko breadcrumbs (for extra crunch)
  • 1 tsp honey (to tone down heat)

Instructions

  1. Prep: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for baking the cauliflower bites.
  2. Batter Up: In a large bowl, whisk together the flour, water or milk, garlic powder, smoked paprika, and salt until you achieve a smooth batter.
  3. The First Bake: Toss the cauliflower florets in the batter ensuring they are evenly coated, shaking off any excess batter. Arrange them in a single layer on the prepared baking sheet. Bake for 20 minutes, flipping halfway through, until the florets are golden and slightly crispy.
  4. Sauce Toss: Remove the baked cauliflower bites from the oven. In a separate bowl, mix the Frank’s RedHot buffalo sauce with melted butter, then toss the florets in this sauce until they are well coated.
  5. The Final Crisp: Return the sauced cauliflower bites to the oven for another 10 to 15 minutes. This final bake will make the sauce sticky and slightly caramelized, resulting in a perfect spicy coating.
  6. Serve: Serve the hot buffalo cauliflower bites with a side of cool ranch dip and fresh celery sticks for contrast and added crunch.

Notes

  • For an air fryer shortcut, air fry the battered florets at 375°F for 15 minutes, then toss in sauce and air fry for an additional 3–5 minutes for extra crispiness.
  • To achieve extra crunch in the batter, add ½ cup Panko breadcrumbs before the first bake.
  • For a milder version of the buffalo bites, stir 1 teaspoon of honey into the buffalo sauce to balance the heat.
