This Southwest Cheddar Fondue is a bold and flavorful twist on classic cheese fondue, made with melted cheddar, smoky spices, and diced tomatoes with green chilies. Perfect for a fondue dinner party, this creamy dip pairs deliciously with toasted bread cubes, tortilla chips, or fresh veggies!

Ingredients

Units Scale
  • 2 cups shredded cheddar cheese
  • 1 tbsp cornstarch
  • 1 cup whole milk
  • 1/2 cup diced tomatoes with green chilies
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder

Instructions

  • Prep the cheese: In a bowl, toss the shredded cheddar cheese with cornstarch to help thicken the fondue.
  • Heat the milk: In a saucepan over medium heat, warm the whole milk until hot but not boiling.
  • Melt the cheese: Gradually stir in the cheese mixture, whisking continuously until smooth.
  • Add flavor: Stir in the diced tomatoes with green chilies, cumin, smoked paprika, and garlic powder. Continue cooking until creamy.
  • Serve warm: Transfer to a fondue pot or serving dish and enjoy with toasted bread cubes, tortilla chips, or fresh vegetables.

Notes

  • Use Monterey Jack or Pepper Jack cheese for a creamier and spicier version.
  • If the fondue is too thick, add a splash of milk to adjust consistency.
  • Serve with pretzels, roasted potatoes, or grilled chicken skewers for a variety of dippers.
  • Keep warm in a fondue pot or slow cooker for extended serving.
