Snickerdoodle Cookie Bars are soft, chewy dessert bars topped with a sweet cinnamon-sugar mixture. Quick to make and perfect for any occasion.

Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 ½ teaspoons cream of tartar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 Tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs, one at a time, then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Spread the dough evenly into the prepared baking pan.
  7. In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle evenly over the dough.
  8. Bake for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.
  9. Let cool completely in the pan before cutting into bars.

  • Don’t overmix the batter after adding dry ingredients to maintain a tender texture.
