Ingredients

Cookie:

  • 1/4 cup all-purpose flour

  • 1/8 tsp baking powder

  • 1 pinch salt

  • 1 tbsp granulated sugar

  • 1 tsp whisked egg

  • 1 1/2 tsp canola oil

  • 2 tbsp unsalted butter, softened

  • 1/8 tsp vanilla extract

  • 3 drops almond extract

Frosting:

  • 2 1/3 tbsp unsalted butter, softened

  • 5 1/2 tbsp powdered sugar

  • 1/4 tsp whole milk

  • 1/8 tsp almond extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a small baking sheet with parchment paper.

  2. In a bowl, combine flour, baking powder, salt, and sugar.

  3. Add softened butter, whisked egg, oil, vanilla, and almond extract. Mix until a soft dough forms.

  4. Shape dough into a ball, flatten into a cookie shape, and place on the baking sheet.

  5. Bake for 8–10 minutes until edges are lightly golden. Do not overbake.

  6. While the cookie cools, make the frosting: beat butter and powdered sugar until fluffy. Add milk and almond extract (if using); mix until smooth.

  7. Frost the cooled cookie generously and enjoy immediately or chill for a firmer texture.

Notes

  • For a fun twist, add sprinkles or a touch of lemon zest to the dough or frosting.

  • The cookie can also be microwaved for a softer texture—about 45–60 seconds on high (but results may vary).
