Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Lemon wedges and extra parsley, for garnish

Instructions

  1. In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, rosemary, oregano, parsley, red pepper flakes, salt, and black pepper to form a marinade.
  2. Rub the marinade all over the pork chops and let them marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
  3. Heat a cast iron skillet or grill pan over medium-high heat.
  4. Sear the pork chops for 4–5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
  5. Let rest for 5 minutes before serving.
  6. Garnish with fresh parsley and lemon wedges before serving.
