4 bone-in pork chops (about 1 inch thick)
2 tablespoons olive oil
4 cloves garlic, minced
Zest and juice of 1 lemon
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh oregano, chopped
2 tablespoons fresh parsley, chopped
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
Lemon wedges and extra parsley, for garnish
Instructions
In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, rosemary, oregano, parsley, red pepper flakes, salt, and black pepper to form a marinade.
Rub the marinade all over the pork chops and let them marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
Heat a cast iron skillet or grill pan over medium-high heat.
Sear the pork chops for 4–5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
Let rest for 5 minutes before serving.
Garnish with fresh parsley and lemon wedges before serving.
