Instructions

  1. Sauté the Shrimp: In a large skillet over medium heat, melt the butter and sauté the peeled shrimp until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside to prevent overcooking.
  2. Cook the Garlic: In the same skillet with the remaining butter and shrimp juices, add the minced garlic and cook for about 1 minute until fragrant, careful not to burn it.
  3. Deglaze with White Wine: Pour in the white wine to deglaze the pan, scraping the bottom to lift all the flavorful bits. Let the wine simmer and reduce slightly for 3-4 minutes.
  4. Add the Cream and Simmer: Stir in the heavy cream and bring the mixture to a gentle simmer. Let it cook for about 5-7 minutes, allowing the flavors to meld and the bisque to thicken slightly.
  5. Blend the Bisque: Using an immersion blender, lightly blend the bisque until smooth but still slightly textured for a satisfying mouthfeel.
  6. Return Shrimp to Bisque: Add the sautéed shrimp back into the bisque to warm through for 2 minutes without boiling.
  7. Finish with Lemon Juice: Remove from heat and stir in fresh lemon juice to brighten the flavors. Adjust seasoning with salt and pepper as needed before serving.
