These delightful shrimp and corn bites are baked to perfection, featuring a savory shrimp filling with a touch of sweet corn, topped with a crispy golden crust for the ultimate savory treat.

Ingredients

Units Scale
  • 12 large shrimp, peeled and deveined
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce (optional for heat)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional for texture)

Instructions

  1. Prepare the filling: In a bowl, combine the shrimp, corn, mayonnaise, sriracha sauce (if using), garlic powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Assemble the bites: Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper and lightly grease with olive oil. Spoon the shrimp and corn mixture into small mounds on the tray, forming individual bite-sized portions. Optionally, sprinkle breadcrumbs on top for an extra crunch.
  3. Bake the bites: Bake in the preheated oven for 15-20 minutes, or until the shrimp are cooked through, and the edges are golden and crispy.
  4. Serve: Once baked, remove from the oven and serve immediately, optionally garnished with fresh herbs or a squeeze of lime for added flavor.

Notes

  • For a spicier version, add more sriracha sauce or some diced jalapeños to the filling.
  • These shrimp and corn bites can also be served with a dipping sauce, such as a tangy ranch or a sweet chili sauce.
  • For a lighter option, skip the breadcrumbs or use a gluten-free version.
