Ingredients

  • 1 cup (225g) unsalted butter, softened

  • 2/3 cup (80g) powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups (250g) all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup strawberry jam (or your favorite fruit jam)

Instructions

  1. In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and fluffy.

  2. Mix in the vanilla extract until combined.

  3. Gradually add the flour and salt, mixing just until a soft dough forms.

  4. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.

  5. Use a round cookie cutter with a decorative edge to cut out circles.

  6. Place the cookies on a parchment-lined baking sheet and chill for 15 minutes.

  7. Preheat your oven to 350°F (175°C).

  8. Bake the cookies for 10-12 minutes, or until the edges are lightly golden.

  9. Allow the cookies to cool completely on a wire rack.

  10. Spread a teaspoon of strawberry jam onto the center of half of the cookies.

  11. Sandwich with the remaining cookies.

  12. Optional: Dust with powdered sugar before serving.

Notes

  • Ensure cookies are completely cool before assembling to prevent the jam from melting and sliding.

  • Feel free to experiment with different jams like raspberry, apricot, or blackberry for variety.

  • These cookies store beautifully in an airtight container for up to 5 days.
