These Sesame Honey Cookies are irresistibly chewy with golden caramelized edges, nutty toasted sesame seeds, and a rich honey-butter flavor. Inspired by nostalgic honey-roasted sesame snacks, they’re perfect for sweet snacking, cozy afternoons, or gifting in a cookie jar.

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/4 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp kosher salt

  • 1/2 cup light brown sugar, lightly packed

  • 1/2 cup granulated sugar

  • 8 tbsp unsalted butter, softened

  • 1/3 cup honey

  • 1 large egg

  • 1 tsp vanilla extract

  • 6 tbsp toasted sesame seeds

Instructions

1. Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

2. Cream Butter & Sugars:

  • In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in the honey, egg, and vanilla extract until smooth and combined.

3. Combine & Chill Dough:

  • Gradually mix the dry ingredients into the wet mixture until a dough forms.

  • Stir in 4 tablespoons of the toasted sesame seeds.

  • Chill the dough for at least 2 hours, or overnight, for best flavor and texture.

4. Shape & Bake:

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • Scoop dough into 1.5-tablespoon portions. Roll the tops in the remaining sesame seeds.

  • Place on the baking sheet, spaced 2 inches apart.

  • Bake for 10–12 minutes, until the edges are golden and centers are still slightly soft.

5. Cool & Serve:

  • Cool cookies on the pan for 5 minutes before transferring to a wire rack.

  • Enjoy warm or store in an airtight container for up to 5 days.

Notes

  • For extra crunch, sprinkle with a pinch of flaky sea salt before baking.

  • Substitute half the sesame seeds with black sesame for a visual twist.

  • These cookies freeze beautifully—just thaw at room temp when ready to enjoy.
