These Sesame Honey Cookies are irresistibly chewy with golden caramelized edges, nutty toasted sesame seeds, and a rich honey-butter flavor. Inspired by nostalgic honey-roasted sesame snacks, they’re perfect for sweet snacking, cozy afternoons, or gifting in a cookie jar.
1 1/2 cups all-purpose flour
1/4 tsp baking powder
1/2 tsp baking soda
1 tsp kosher salt
1/2 cup light brown sugar, lightly packed
1/2 cup granulated sugar
8 tbsp unsalted butter, softened
1/3 cup honey
1 large egg
1 tsp vanilla extract
6 tbsp toasted sesame seeds
1. Mix Dry Ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
2. Cream Butter & Sugars:
In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the honey, egg, and vanilla extract until smooth and combined.
3. Combine & Chill Dough:
Gradually mix the dry ingredients into the wet mixture until a dough forms.
Stir in 4 tablespoons of the toasted sesame seeds.
Chill the dough for at least 2 hours, or overnight, for best flavor and texture.
4. Shape & Bake:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Scoop dough into 1.5-tablespoon portions. Roll the tops in the remaining sesame seeds.
Place on the baking sheet, spaced 2 inches apart.
Bake for 10–12 minutes, until the edges are golden and centers are still slightly soft.
5. Cool & Serve:
Cool cookies on the pan for 5 minutes before transferring to a wire rack.
Enjoy warm or store in an airtight container for up to 5 days.
For extra crunch, sprinkle with a pinch of flaky sea salt before baking.
Substitute half the sesame seeds with black sesame for a visual twist.
These cookies freeze beautifully—just thaw at room temp when ready to enjoy.
