For the Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For the Roasted Potatoes

  • 2 medium potatoes, cut into small cubes
  • 1½ tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For the Zucchini & Onion

  • 1 medium zucchini, sliced
  • ½ medium onion, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Roast the Potatoes: Preheat your oven to 200°C (400°F). Toss the cubed potatoes with olive oil, salt, and black pepper until evenly coated. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25 to 30 minutes, flipping halfway through, until the potatoes are golden brown and crisp on the edges.
  2. Sear the Chicken: Pat the chicken breasts dry with paper towels to remove excess moisture, then season both sides with salt and black pepper. Heat olive oil in a skillet over medium heat. Once hot, add the chicken breasts and sear for 6 to 7 minutes on each side until they develop a golden crust and are cooked through. Remove from heat and let rest for 3 minutes to retain their juices.
  3. Sauté the Zucchini & Onion: Heat olive oil in a pan over medium heat. Add the sliced onion and cook for 2 to 3 minutes until it softens. Add the zucchini slices, season lightly with salt and pepper, and continue sautéing for 4 to 5 minutes until the zucchini is tender and slightly caramelized.
  4. Plating: Arrange the seared chicken breasts in the center of a white ceramic plate. Place the roasted potatoes neatly in the bottom-right quadrant and spoon the zucchini and onion mixture into the left quadrant. Serve immediately to enjoy the textures and freshness.
