A quick and flavorful Scallion Chicken recipe featuring tender chicken thighs marinated in a savory blend of soy, oyster sauce, and pepper, pan-fried to perfection and complemented by aromatic scallions. Perfect for a 20-minute meal that pairs beautifully with rice or noodles.

Ingredients

Scale

Chicken and Marinade

  • 400 g chicken thighs, cut into small pieces
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder (adjust to taste)
  • 2 tablespoons corn starch

Vegetables and Cooking

  • 2 cups scallions, chopped (separate white and green parts)
  • 4 tablespoons oil

Instructions

  1. Preparing: In a mixing bowl, combine the cut chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Mix well to coat the chicken evenly. Marinate for 10 minutes to allow flavors to penetrate. While marinating, chop the scallions and separate the white parts from the green parts.
  2. Pan frying chicken: Heat the oil in a non-stick pan over medium heat. Add the marinated chicken pieces and pan fry until the chicken is fully cooked and slightly golden on the outside, approximately 7-8 minutes, turning as needed for even cooking.
  3. Adding scallions: Add the white parts of the scallions to the pan. Stir and cook until the scallions become soft and fragrant. If the chicken pieces are larger or bone-in, cover the pan with a lid to ensure thorough cooking. Finally, add the green scallion parts and stir for an additional 10 to 20 seconds just to soften them slightly without losing their vibrant color.
  4. Serving: Remove from heat and sprinkle additional black pepper powder or extra scallions if desired. Serve hot alongside steamed rice or noodles for a hearty meal.

Notes

  • Marinating the chicken helps tenderize and infuse the flavors deeply.
  • Separating the white and green parts of scallions ensures optimal texture and freshness in the final dish.
  • Using a non-stick pan prevents sticking and allows for easy cooking without burning.
  • Adjust black pepper quantity according to your spice preference.
  • This dish is best served fresh for maximum flavor and texture.
