These Savory Spinach and Feta Cookies are tender, cheesy bites packed with Greek-inspired flavor. With crumbled feta, fresh herbs, and finely chopped spinach, these salty snacks are crisp on the outside, soft inside, and perfect for brunch, picnics, or appetizer spreads.

Ingredients

  • 1 cup cooked spinach, well-drained and finely chopped

  • 1 1/4 cups all-purpose flour

  • 1/2 cup unsalted butter, softened

  • 1 egg

  • 1/2 cup crumbled feta cheese (plus extra for topping)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder (optional)

  • 1 tbsp chopped fresh dill or parsley

Instructions

  1. Prep Oven:
    Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.

  2. Make Dough Base:
    In a bowl, cream together softened butter and egg until smooth.

  3. Combine Dry Ingredients:
    In a separate bowl, whisk flour, baking powder, salt, pepper, and garlic powder.

  4. Mix It Together:
    Gradually add dry ingredients to the butter mixture. Fold in chopped spinach, feta, and herbs until dough is evenly combined.

  5. Shape Cookies:
    Scoop tablespoon-sized portions, roll into balls or slightly flatten into cookie shapes. Top with extra feta crumbles if desired.

  6. Bake:
    Place on prepared tray and bake for 15–18 minutes until lightly golden around the edges.

  7. Cool & Serve:
    Let cool slightly. Serve warm or at room temperature as a snack or side.
