These Savory Carrot Zucchini Fritters are crispy on the outside and tender on the inside, packed with colorful veggies and melty cheese. A quick, wholesome recipe ideal for breakfast, lunchboxes, or a healthy snack. Kid-friendly, easy to prep, and pan-fried to golden perfection.

Ingredients

  • 1 medium zucchini, grated

  • 1 medium carrot, grated

  • 1/2 cup shredded cheese (cheddar or mozzarella)

  • 2 eggs

  • 2 tablespoons chopped green onions

  • 1/4 cup all-purpose flour or oat flour

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • Salt, to taste

  • Olive oil, for cooking

Instructions

  1. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.

  2. In a mixing bowl, combine the zucchini, carrot, shredded cheese, eggs, green onions, flour, garlic powder, salt, and black pepper.

  3. Stir until everything is well combined and the batter holds together.

  4. Heat a nonstick skillet over medium heat and drizzle in a bit of olive oil.

  5. Scoop about 2 tablespoons of the mixture per fritter into the skillet, flattening slightly with a spatula.

  6. Cook for 3–4 minutes per side, until golden brown and crispy.

  7. Transfer to a plate lined with paper towels.

  8. Serve warm, optionally topped with a dollop of Greek yogurt or sour cream.

  • For gluten-free fritters, use oat flour or a gluten-free all-purpose blend.
