  • 2 tablespoons olive oil
  • 1 lb uncooked Italian sausage
  • 1 small white onion (thinly sliced)
  • 23 garlic cloves (minced)
  • 1 8 oz can tomato puree
  • 1 14 oz can crushed tomatoes
  • 13 cups chicken broth (adjust to desired consistency)
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped and softened)
  • 1/4 cup parmesan cheese (grated)
  • Kosher salt and freshly ground black pepper (to taste)
  • Fresh parsley (chopped, for serving)

Instructions

  1. Heat olive oil: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add onions and cook until softened, about 4–5 minutes.
  2. Cook sausage and garlic: Add sausage, breaking it up with a spatula, and cook until no longer pink. Stir in garlic and cook for 1 more minute until fragrant.
  3. Add tomatoes and broth: Pour in tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce to a simmer and cook 10–15 minutes.
  4. Incorporate cream cheese: Add cream cheese and half the parmesan cheese. Stir until the cream cheese melts into the soup, creating a smooth, creamy consistency. Adjust with more chicken broth if you prefer a thinner soup.
  5. Season and serve: Season with salt and black pepper to taste. Ladle into bowls and top with remaining parmesan and fresh parsley before serving.
