1lb uncooked Italian sausage
1 small white onion (thinly sliced)
2 –3 garlic cloves (minced)
1 8oz can tomato puree
1 14oz can crushed tomatoes
1 –3cups chicken broth (adjust to desired consistency)
1 teaspoon dried basil
1cup cream cheese (chopped and softened)
1/4cup parmesan cheese (grated)
Kosher salt and freshly ground black pepper (to taste)
Fresh parsley (chopped, for serving)
Instructions
Heat olive oil: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add onions and cook until softened, about 4–5 minutes.
Cook sausage and garlic: Add sausage, breaking it up with a spatula, and cook until no longer pink. Stir in garlic and cook for 1 more minute until fragrant.
Add tomatoes and broth: Pour in tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce to a simmer and cook 10–15 minutes.
Incorporate cream cheese: Add cream cheese and half the parmesan cheese. Stir until the cream cheese melts into the soup, creating a smooth, creamy consistency. Adjust with more chicken broth if you prefer a thinner soup.
Season and serve: Season with salt and black pepper to taste. Ladle into bowls and top with remaining parmesan and fresh parsley before serving.
