A bold, cheesy fusion dish baked right in the sardine tin — this Sardine Margarita bake is a Mediterranean twist on comfort food, with juicy sardines, bubbly mozzarella, herbed tomato sauce, and fresh basil, perfect for scooping up with crusty bread.

Ingredients

  • 1 can (4 oz) sardines in olive oil (keep the tin)
  • 1/2 cup canned diced tomatoes
  • 1 tbsp tomato paste
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • 1/4 tsp chili flakes (optional)
  • 1/2 cup shredded mozzarella cheese or fresh mozzarella slices
  • 1 tbsp grated Parmesan (optional)
  • Fresh basil leaves, to garnish
  • Crusty bread or crostini, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix diced tomatoes, tomato paste, garlic, oregano, salt, pepper, and chili flakes.
  3. Open the sardine tin and gently drain excess oil (leave a little for flavor).
  4. Pour the tomato mixture over the sardines directly in the tin. Stir gently to coat.
  5. Top with mozzarella cheese and Parmesan if using.
  6. Place the tin on a baking tray and bake for 12–15 minutes, or until the cheese is melted and bubbling.
  7. Garnish with fresh basil.
  8. Serve hot with toasted bread or crostini.

Notes

  • Use sardines in tomato sauce for a stronger flavor base if preferred.
  • Careful not to over-stir sardines to keep them intact.
  • Can also be made in a ramekin if not using the tin.
  • Pairs well with a chilled glass of white wine or sparkling water.
