  • 1 prepared pie crust (store-bought or homemade)
  • 1 cup honey
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt (plus more for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Line the pie crust with parchment paper and fill with pie weights or dry beans.
  2. Bake for 15 minutes, then remove the parchment and weights and bake for another 5 minutes until golden brown.
  3. In a large bowl, whisk together the honey, granulated sugar, eggs, heavy cream, melted butter, and vanilla extract until smooth.
  4. Pour the filling into the pre-baked pie crust and smooth the top with a spatula.
  5. Bake for 30-35 minutes, or until the filling is set and slightly golden. The center should still be a little wobbly.
  6. Remove from the oven and let the pie cool completely at room temperature.
  7. Before serving, sprinkle with a pinch of sea salt on top for a delightful contrast of sweet and savory.
