Scale

Ingredients

  • 3 black carrots, peeled and sliced
  • 3 medium turnips, peeled and chopped
  • 2 tablespoons salt
  • 2 tablespoons bulgur flour
  • 8 cups water

Instructions

  1. Prepare the Vegetables: Peel and slice the black carrots and parsley root. Chop the turnips into small pieces to ensure even fermentation.
  2. Mix Ingredients: In a large glass or ceramic container, combine the black carrots, turnips, salt, and bulgur flour. Pour in the water and stir thoroughly to dissolve the salt and incorporate the bulgur flour evenly.
  3. Fermentation Process: Cover the container with a breathable cloth or lid to allow gases to escape. Leave it at room temperature for 5 to 7 days, stirring occasionally to promote fermentation. You will notice bubbles forming, indicating active fermentation.
  4. Strain the Juice: After fermentation, strain the liquid through a fine mesh sieve or cheesecloth to remove solid pieces and collect the juice.
  5. Chill and Serve: Refrigerate the strained juice until cold. Serve chilled as a refreshing probiotic beverage.

Notes

  • Ensure the container is clean to avoid unwanted bacteria interfering with fermentation.
  • The fermentation time may vary according to room temperature; warmer environments will speed up the process.
  • Salgam juice has a strong, tangy flavor that might be an acquired taste for some.
  • You can adjust salt quantity according to your preference for flavor and preservation.
  • Consume within one week after refrigeration for best freshness.
