Ingredients

  • 2 cups all-purpose flour
  • 2 1/2 cups milk
  • 3 large eggs
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 3 tbsp melted butter, plus more for frying
  • 400 g farmer’s cheese or ricotta
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Honey or syrup for serving

Instructions

  1. In a large bowl, whisk together flour, milk, eggs, sugar, salt, and melted butter until smooth. Let the batter rest for 20-30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter.
  3. Pour a small ladle of batter into the pan and swirl to cover the surface evenly. Cook until edges lift and the bottom is golden, about 1-2 minutes. Flip and cook the other side for 30 seconds. Repeat with remaining batter.
  4. In a mixing bowl, combine farmer’s cheese, powdered sugar, and vanilla extract until smooth.
  5. Place a spoonful of cheese filling on each crepe and fold or roll them up.
  6. Optional: lightly fry filled crepes in butter until golden on all sides.
  7. Serve warm drizzled with honey or syrup.
