Ingredients

  • 2½ cups granulated sugar
  • 1½ cups water
  • 1 packet unflavored gelatin (or 2 tbsp powdered gelatin)
  • 1½ tsp rose water (high-quality)
  • 2 drops red food coloring (optional, for pink hue)
  • ½ cup confectioners’ sugar (for coating)

Instructions

  1. Line a 9-inch cake pan with foil, leaving overhang. Lightly coat with non-stick spray.
  2. In a large pot, stir together sugar, water, and gelatin. Bring to a boil, then reduce heat to medium and simmer for 20 minutes, stirring constantly.
  3. Remove from heat and stir in rose water and red food coloring if using.
  4. Pour mixture into the prepared pan. Cover with plastic wrap and refrigerate for at least 8 hours or overnight until set.
  5. Sprinkle a cutting board with confectioners’ sugar. Flip the set jelly onto the board and peel off the foil.
  6. Slice into cubes using a sharp knife.
  7. Roll each piece generously in confectioners’ sugar to prevent sticking.
  8. Serve immediately or store in an airtight container at room temperature for up to 1 week.
