  • 7 oz (200 g) dark chocolate (70% cocoa)
  • ½ cup (115 g) unsalted butter
  • ¾ cup (150 g) granulated sugar
  • 3 large eggs
  • ¼ cup (30 g) all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan or round cake tin with parchment paper.
  2. In a heatproof bowl over simmering water, melt the dark chocolate and butter together. Stir until smooth, then remove from heat and let cool slightly.
  3. In a separate mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until pale and slightly thickened.
  4. Gently fold the melted chocolate mixture into the egg mixture until combined.
  5. Sift in the flour and fold gently just until incorporated—do not overmix.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20–25 minutes, or until the edges are set but the center remains slightly soft and jiggly.
  8. Let the gâteau rest for 10 minutes before slicing. Serve warm for a molten texture or chilled for a denser consistency.
