  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 large egg whites
  • 1 tablespoon gelatin powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar

Instructions

  1. Prepare raspberry purée: Wash raspberries and purée until smooth. Strain to remove seeds.
  2. Make syrup: Combine sugar, corn syrup, and water in a pot. Heat until boiling and reaches 240°F.
  3. Bloom gelatin: Bloom gelatin in cold water for 5 minutes.
  4. Combine gelatin and syrup: Stir bloomed gelatin into the hot syrup. Add raspberry purée, vanilla, and salt.
  5. Whip egg whites and mix: Whip egg whites until stiff peaks form. Gradually add warm raspberry mixture while whisking.
  6. Set marshmallow: Grease an 8-inch pan and pour in the marshmallow mixture. Let set for at least 4 hours.
  7. Finish and shape: Dust surface with powdered sugar, turn out the marshmallow, and cut into hearts.
