Ingredients

    • 2 cups graham cracker crumbs (or crushed vanilla cookies)
    • 1/2 cup unsalted butter (melted)
    • 2 tbsp sugar

    For the Cheesecake Filling:

    • 16 oz (2 blocks) cream cheese (softened)
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 1/2 cups heavy whipping cream
    • 1/2 cup rainbow sprinkles (optional, for a funfetti look)

    For the Rainbow Topping:

    • 2 cups whipped topping (or extra whipped cream)
    • Gel food coloring (pink, yellow, green, blue, purple)

Instructions

Prepare the Crust:

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press into the bottom of the pan and chill in the fridge while making the filling.

Make the Cheesecake Filling:

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. (Optional) Fold in rainbow sprinkles for a funfetti look.
  5. Spread evenly over the crust and smooth the top.

Make the Rainbow Topping:

  1. Divide whipped topping into 5 bowls and tint each with a different food coloring.
  2. Spoon the colors over the cheesecake in stripes and gently smooth together for a blended rainbow effect.

Chill & Serve:

  1. Refrigerate for at least 4 hours (or overnight) until set.
