These Pistachio Rice Krispie Treats with Dark Chocolate combine the classic crispy sweetness of marshmallow treats with the rich nuttiness of pistachio pudding and a decadent dark chocolate drizzle for a delightful twist.

  • 6 Tablespoons salted butter
  • 16 ounce bag mini marshmallows, (divided)
  • 3.5 ounce box instant pistachio pudding mix
  • 1 teaspoon pure vanilla extract
  • 6 cups rice krispies cereal
  • 1/2 cup dark chocolate (melted)

Instructions

  1. Step 1: In a large pot, melt butter over medium heat. Add all but 1 cup of the mini marshmallows and continue stirring until completely smooth. Remove from heat.
  2. Step 2: Add dry pistachio pudding mix and vanilla extract. Fold in with spatula. Add in cereal and remaining 1 cup of mini marshmallows. Mix completely.
  3. Step 3: Pour into a parchment paper lined 9-inch square baking dish. Allow treats to cool and set at least one hour. Remove from dish, remove parchment paper. Cut into 16 squares.
  4. Step 4: Drizzle with melted dark chocolate, allow to set, about 15 minutes. Enjoy (these are great in the fridge)!
