These soft, buttery sugar cookie bars are infused with the nutty sweetness of pistachio pudding and a hint of almond and vanilla. Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 box (3.4 oz) pistachio instant pudding mix
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 drops green food coloring (optional)
  • Chopped pistachios, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs, vanilla extract, and almond extract. Beat until smooth.
  4. Mix in the pistachio pudding mix and green food coloring, if using.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients until fully combined.
  6. Press dough evenly into the prepared baking dish.
  7. Bake for 20–25 minutes or until edges are lightly golden and center is set.
  8. Cool completely before slicing into bars. Garnish with chopped pistachios.

Notes

  • For extra pistachio flavor, add 1/4 tsp pistachio extract if available.
  • Store bars in an airtight container at room temperature for up to 4 days.
