A tropical mocktail made with muddled pineapple, mint, and lime, blended with coconut water and topped with sparkling soda for a bubbly, refreshing summer sip.

Ingredients

  • 1 cup fresh pineapple chunks
  • 1 tablespoon fresh lime juice
  • 1 teaspoon agave syrup or honey (optional)
  • 1 cup coconut water
  • 1/2 cup sparkling water or club soda
  • 68 fresh mint leaves
  • Ice cubes
  • Pineapple wedges and mint sprigs for garnish

Instructions

  1. In a glass or shaker, muddle the pineapple chunks with lime juice, mint leaves, and agave syrup until fragrant and juicy.
  2. Add coconut water and stir well to combine.
  3. Fill serving glasses with ice cubes and pour the mixture over the ice, dividing evenly.
  4. Top each glass with sparkling water or club soda for a fizzy finish.
  5. Garnish with a pineapple wedge and a sprig of mint. Serve chilled.

Notes

  • For an extra chilled drink, use frozen pineapple chunks instead of fresh.
  • Adjust sweetness by adding more or less agave or honey to taste.
